CHEF ENRIQUE COOKING WORKSHOP :::

Help prepare and enjoy a meal with one of the pioneers of the new food movement in Cuba. Enrique is a master chef that is taking traditional cuisine to the next level.

WORKSHOP DESCRIPTION
Enrique is the owner of a popular casual eatery with an outdoor patio dining area. The workshop consists of making an entire meal (entree, main course, dessert) together with him and his staff that is later enjoyed and eaten as lunch.

The participants observe the cooking process as well as help prepare ingredients while Enrique and his staff explain the procedures and philosophy of their cooking style. Enrique draws from the traditional food culture of Cuba and then adds international influences.

A big part of the new Cuban cuisine is sourcing ingredients that cannot be found in regular markets such as organic vegetables, fresh fish, and quality herbs and spices. Like most things in Cuba, the sourcing of ingredients is done through personal contacts. Enrique gets much of his organic produce from an innovative private farm project just outside of Havana.

Enrique and his staff speak very good English and are very passionate about their work and the future of Cuban cuisine. He can talk about all aspects of Cuban food and what it's like to pioneer the new food movement in Cuba.

SPANISH CUISINE COOKING WORKSHOP :::

Make a sumptuous traditional paella from the Spanish region of Valencia at La Barraquita.

WORKSHOP DESCRIPTION
As a Spanish colony for several hundred years, Cuba is soaked in Spanish tradition. The owners of La Barraquita are descendents from the Valencia region of Spain and have dedicated their restaurant to bringing this cooking tradition to Cuba. Their elegant establishment has many decorations and photos from that region.

This workshop consists of making a traditional paella from start to finish. Paella's are a wonderful stew of rice, vegetables, and meats, all cooked in a special way distinct to a region and particular to the individual chef. Each main ingredient - the rice, vegetables, and meats, all have there own sophisticated cooking process. Guests will help in the cutting and mixing of all these ingredients while the chef oversees everything.

The workshop takes place inside the restaurant proper as all the cooking is done with portable equipment. The restaurant staff and chefs will provide valuable background and be available to answer all your questions including how they source their beautiful ingredients under difficult conditions in Cuba.
